Seafood dishes appreciated at Brussels
HB Grandi’s stand at the Seafood Expo Global in Brussels has as usual attracted the attention of those attending the event, not least because of the seafood dishes that were served during the exhibition. Chef Oddur Smári Rafnsson did the honours this year, taking time out from his regular position as chef at Norðanfiskur in Akranes.
The stand itself measured 90 square metres, designed by Íslenska Auglýsingastofan in co-operation with HB Grandi’s staff.
Oddur Smári Rafnsson was on call throughout the exhibition, and provided dishes that included seafood soup, lightly smoked redfish with potato salad and dill sauce, cod brandade with toasted mushrooms, lightly smoked redfish with beetroot purée and green masago, maki rolls with saithe in shiracha with avocado and leon grass, and mixed seafood salad.
‘The food was outstanding and was appreciated by both passers-by and visitors to the stand,’ said marketing director Brynjólfur Eyjólfsson, adding that the shopping list prior to the exhibition was extensive.
Oddur Smári Rafnsson has travelled straight from Brussels to take part in the opening of a new restaurant on Norðurbakki in Hafnarfjörður, which goes by the name of Brikk brauð & eldhús.
